They say eating won’t solve any problems, but it may make you feel better. But let’s be fair, we don’t want to be too naughty. So for one of those days these guys are perfect if you want to eat something sweet. They are quite heavy, but taste like a mix of peanut butter and bananas. Because they are mostly peanut butter and bananas…

We packed them for one of our trips and I had two of them an evening before instead of workout… But let’s assume it’s still better than eating a cake like this.

Peanut butter and banana muffins

Makes: 6

Adopted from Chelsea's Messy Apron

  • 1/2 cup (2 medium) very ripe banana, mashed up
  • 1/2 cup crunchy peanut butter
  • 4 Tbsp dark muscovado sugar
  • 1 tsp vanilla extract
  • 1 egg, beaten
  • 1/4 tsp salt
  • 1/2 tsp baking soda
  • 1/4 tsp baking powder
  • 1/3 cup wholemeal flour
  • 1/3 cup old jumbo oats
  • 1/3 cup dates, chopped
Preheat the oven to 180°C/160°C fan and very lightly butter a 6-hole muffin tin.
Place the mashed bananas, peanut butter, muscovado sugar and vanilla extract in a bowl and mix until well combined.
Mix in the egg.
Add the salt, baking soda, baking powder, wholemeal flour, jumbo oats and dates. Stir to combine.
Spoon the mixture into the muffin tin. Bake for 20-25 minutes and pale golden on top.
Leave in the tin for a few minutes before turning out.
