Hey there! Anybody here?

It’s been a while. I won’t go into details now, but all in all I’ve missed you and this little place of mine. It’s funny how talking to yourself on the web is something one would miss. I also noticed that once I’ve ditched the blog I lost a place to store my recipes and stories from my trips.

So say hi if you still remember me and hopefully we will talk to each other more often.

And now let’s make banana muffins, for almost empty office (we do have a long bank holiday weekend and most of my peers will work from home tomorrow).

Chocolate banana muffins

Recipe from Moje wypieki

  • 2/3 cup plain flour
  • 2/3 cup rolled oats
  • 1/2 cup caster sugar
  • 1 1/2 tsp baking powder
  • 2 tsp cocoa powder
  • 2 very ripe bananas, mashed up
  • 2 Tbsp rapeseed oil
  • 2/3 cup milk, room temperature
  • 1 egg, beaten
  • 70 g dark chocolate, chopped
  • 80 g walnuts, chopped
Preheat the oven to 190°C/170°C fan.
If you are using a silicone muffin pan, just skip this step, your muffins will nicely pop up from the pan, otherwise butter a muffin pan or line them with paper cases.
Add the flour, rolled oats, baking powder and cocoa powder into a large bowl and stir together.
In a separate bowl put the mashed bananas, oil and egg and whisk it.
Pour the liquid ingredients into the flour mixture and stir gently to combine.
Mix in the chopped chocolate and walnuts.
Divide the mixture equally between the muffin cases.
Bake in the oven for 25 minutes and a skewer inserted in it comes out clean.
