Muffins are easy. If they are demanding that means they are cupcakes or something else, but not muffins. So I want to dedicate this recipe for all of you who are looking for simple, basic recipe for muffins. They are perfect with any kind of fruits – plums, apples, cherries, strawberries. You can add chocolate if you want.

Easy muffins
Makes 16 muffins
- 2 cup plain flour
- 1 tsp baking powder
- 1 tsp baking soda
- 120 g caster sugar
- 2 eggs, beaten
- 1/2 cup oil (I used canola oil)
- 300 g yoghurt or sour cream
- fruits, I used 2 peaches, but you can add more
- Demerara sugar for sprinkling
Preheat the oven to 190°C (170°C fan).
If you are using a silicone muffin pan, just skip this step, your muffins will nicely pop up from the pan, otherwise butter a muffin pan or line them with paper cases.
Sift the flour, baking powder and baking soda into a large bowl.
Add the sugar and stir together.
In a separate bowl put the eggs, oil, and yoghurt and mix together with a fork.
Pour the liquid ingredients into the flour mixture and stir gently to combine.
Divide the mixture equally between the muffin cases.
Dice peaches and place them on the top of each muffin and sprinkle with sugar.
Bake in the oven for 25 minutes.
Leave to cool on a wire rack.
